What does an FSSAI inspector actually check?

Inspectors work through broadly the same categories every audit does: personal hygiene, cross-contamination control, temperature control across the cold chain and cooking, cleaning and sanitation, pest control, waste management, and documentation.

Being "inspection-ready" isn't a one-time state. It's whatever your kitchen looks like on an ordinary Tuesday, not the version you'd prepare for if you had two weeks' notice. That's why we run mock inspections that simulate the real thing, unannounced or scheduled, rather than only auditing on a day the team knows is coming.
